Cologne, Germany, has had a long tradition of brewing top-fermented beers since medieval times, but the beer known today as kölsch only developed in the late 1800s, during the fight against the invasive bottom-fermented lager. Kölsch is protected by the Kölsch Convention (1986) and its production is limited to about 20 breweries around Cologne. The Convention describes it simply as a "light, very unfermented, hop-accented, clear top-fermented Vollbier".

4kg Viking Pilsner malt

 

Hops (+ boiling time):
30g Tettnanger hops

10g Magnum hops
