Bavarian brown lager, also known as Dunkel, has been made in Bavaria since the 12th century. Initially made in Benedictine monasteries, it quickly became popular and widespread. The greatest influence on the beer type was the Reinheitsgebot of 1516. The law at the time stipulated that beer could only contain barley malt, hops and water (at the time, yeast was not known to be responsible for fermenting beer). The aim of the law was to improve the quality of beer and keep the price of bread down. After all, if the brewers did not buy up the rye and wheat, the farmers could only sell the produce to the bakers. Even then there were mutts. :) In any case, this was when Dunkel was standardised, and we can consider it the birth of the style.
