Calcium sulphate increases calcium and sulphate levels and slightly reduces pH.

Calcium plays an important role in mashing and is essential for enzymes. In addition, the health of the yeast and the success of the fermentation process depend on the calcium level.

Sulphate is responsible for the bitterness of the sip, bringing out the hops and reducing the malty aftertaste.
