Black Malt is produced by roasting pilsner malt. The final temperature is more than 200˚C. The amylolytic activity of Black Malt is zero. The amount of fermentable extract is low.
Viking Black Malt is used in dark beers like stouts and porters, mainly for its strong coloring ability. Normally portions of 1–2% give a remarkable increase in color without significant change in flavor. By raising the percentage of Black Malt in the malt bill, the changes in taste can be found quickly. Dosage rates of more than 10% are rare.
Viking Malt comes from a small town in Finland and has grown to be a big name in the world of malt-making. Over the years, they've joined forces with other malt producers in the Baltic area. Now, they're the top malt company in Northern Europe and one of the biggest in all of Europe. They get their grains from places in North and East Europe where the air is cleaner, which means their malt has a fresh and pure taste.
