Sprau® is a malted faba bean (fava, broad, or field bean) developed to enhance both the brewing
process and the final beer. This innovative malted legume contributes to sustainable agriculture
while delivering unique benefits to brewing, including improved yeast nutrition, enhanced hop
aroma, and a richer mouthfeel. Its naturally high protein content aids foam formation, providing a
stable and attractive beer head. With a mild, roasted, and slightly cereal-like flavor, Sprau® integrates
smoothly into various beer styles, especially hoppy beers such as Pale Ales and IPAs.
How to Apply
Sprau® is an excellent addition to brewing recipes, particularly for hop-forward styles where it helps
intensify hop aromas and reduce unwanted fermentation by-products. Due to its high gelatinization
temperature (80°C), brewers should carefully plan the mashing process, using pre-gelatinization
techniques or thermostable amylase enzymes to ensure smooth integration.
What to Use it For
Sprau® is particularly beneficial in hop-forward beers such as Pale Ales, IPAs, and hazy beers, as it
enhances hop aroma and balances bitterness. It also improves foam stability and mouthfeel, making
it useful for a variety of beers, including low-alcohol beers, where it improves the taste profile.
Additionally, it can be used in experimental and sustainable brewing projects, supporting biodiversity
and regenerative agriculture.
Key Features:
- Enhances Hop Aroma: Amplifies hop flavors, making it ideal for hoppy beers such as IPAs and
Pale Ales.
- Improves Foam Retention: Due to its naturally high protein content, Sprau® contributes to
stable, attractive beer foam.
- Adds Body & Mouthfeel: Increases fullness in beer, providing a smoother, richer texture.
- Sustainable Brewing Ingredient: Supports regenerative agriculture by promoting crop
rotation and nitrogen fixation, reducing the need for synthetic fertilizers.
- Nutrient-Rich Wort: Sprau® wort provides excellent yeast nutrition, supporting healthy
fermentation and minimizing off-flavors.
- Mild, Roasted Cereal Flavor: Unlike raw faba beans, Sprau® has undergone malting to reduce
bitterness and astringency, offering a smooth cereal-like taste not impacting the beer.
Tips & Tricks:
- Use Sprau® at 10-15% of the grist to improve foam, mouthfeel, and hop aroma especially in
Pale Ales and IPAs.
- For low-alcohol beers, Sprau® enhances taste and balances the overall profile, improving
drinkability.
- Since faba beans have a higher gelatinization temperature (80°C) than barley (63-66°C),
consider using pre-gelatinization methods or thermostable amylase enzymes to optimize
starch conversion.
- Combine Sprau® with Pilsner malt to maintain a clean and crisp beer character while gaining
the benefits of enhanced foam and mouthfeel.
